Some of you have been kind enough to let us know of the myriad creative ways in which you enjoy our crisps. Here is a sampling of the crispy combinations you’ve conjured.



Hello…
I have become addicted to your Raincoast Crisps and have been using them instead of crostini for many hors d’oeuvres. They have served as a base for:
 
1. Tomato bruschetta (in the summer only… especially good on “the original”)
2. Fresh mozzarella, sundried tomato pesto and kalamata olive half with a sprinkling of sea
salt and a drizzle of olive oil.
3. Goat cheese, olivada, fresh oregano
4. Feta cheese, roasted tomato, fresh basil leaf
5. Caponata, roasted garlic
 
These are a few of my favorites, all greatly enhanced by using the Raincoast Crisps in place of
the usual boring crostini bread! I mix and match which the variety of crisps I feel like using according
to the toppings I decide to serve.

My favourite way to eat Lesley Stowe’s Raincoast Crisps:
 
On a rainy Vancouver day, I love to eat Rosemary Raisin Pecan Raincoast Crisps with a bowl of melted Brie, chopped pecans and caramel. It is a smooth, comforting and decadent treat.
 
Ingredients include:
 
½ cup of brown sugar
½ cup of thick cream
½ cup of butter
¼ of nutmeg
12 ounces of brie
½ cup of sugar
½ cup of chopped pecans
 
Start by putting your oven on at a temperature of 222 degrees and allow it to pre-heat. Find a saucepan and melt the sugar, butter and brown sugar until the sugar disappears. Beat and add your thick cream in the same pan until it runs smooth. Add your nutmeg and keep stirring your sauce until it becomes caramel. Find a dish or party dish if you are sharing with friends and place the Brie in it. Now pour the caramel over the Brie and put it in the oven for 10 minutes. Note: make sure your party dish can withstand the heat of the oven. Wait for 5 minutes before you serve your dish. Just add your Lesley Stowe’s Raincoast Crisps and voilà: a tasty treat on a rainy day.

Just recently, after beginning a journey to a healthier lifestyle of eating, a friend and I visited Whole Foods to do our store tour and food review. We discovered a big display of “new-to-the-store” Raincoast Crisps in the rather large and beautiful cheese counter display, and asked for a sample. Delightful and healthy with layers of flavour! I picked up two boxes.
 
Just last night, I finished dehydrating some pears and apples, so decided to top a Fig and Olive Raincoast Crisp with a piece of organic cheddar cheese, and a slice of dehydrated pear. The thinly slices pears were so juicy that they dried to a somewhat caramelized texture. What a burst of complex flavours resulted from this particular combination. I will serve this at our next book club gathering! The possibilities are endless!
