Dried Cranberry & Candied Orange Confit

For a slightly different cranberry condiment on your table this Christmas, try this simple but yummy alternative to the holiday classic.



Ingredients

Zest of 1 orange
Juice of 2 oranges
200g dried cranberries
1/2 cup honey
1/2 cup sugar



Directions

Cut the orange zest into fine julienne and blanch in a saucepan of boiling water for 1 minute. Drain and set aside until ready to use.

Combine the cranberries and orange juice with the honey and sugar in a saucepan and simmer over a low heat until the liquid has reduced to a syrup. Add the orange zest, transfer the mixture to a bowl and set aside to cool.
