Butter plays a huge role in cooking and baking and, as with so many other key ingredients, the better the quality the better the taste of the final product. I use only unsalted butter, which is usually made with cream that’s fresher than the cream in salted butter. Salt acts as a preservative, so the cream lasts longer, but that’s not always a good thing because it covers up the freshness. Using unsalted butter also gives you control over the amount of salt in the finished dish.
